Rocky Mountain Oysters

Food

Rocky mountain oysters (Rocky mountain oysters) is a romantic name coined by Americans for a dish of bull testicles. Alternative names are Prairie oysters or cowboy oysters.

Bull testicles are considered a delicacy. Rocky Mountain oysters are usually served as an appetizer. For preparation, the oysters are peeled from the skin, cut into small pieces and fried in batter. Rocky Mountain oysters got their name probably because of the tender meat which is similar to oyster meat in texture.

Rocky Mountain oysters are most popular in the American West and western Canada, where cattle ranches and the castration of young males are common. Some states (Montana, Colorado, Michigan, Idaho, Illinois, Missouri, Ohio) even have festivals dedicated to cooking this unusual dish. Rocky Mountain oysters are also found here in bars and some public places. For example, they are served at Coors Field during Colorado baseball games. Mountain oysters are mentioned in episode 8 of season 5 of the TV series “House of Cards.”

The main feature of American bullseed recipes is the marinade of local beer, which can be substituted for any dark beer.

Below is a traditional American recipe for mountain oysters. It is very important to choose the testicles responsibly. They should be pink in color with veins of bluish hue. Under no circumstances should there be any unpleasant smell or greenish color.

Ingredients – Rocky Mountain Oysters:
Bull testes – 4 pairs,
dark beer – 1 liter,
breadcrumbs – 1.5 cups,
chicken eggs – 2-3 pcs,
mustard – 1 tablespoon,
Ground black pepper – to taste,
salt – to taste,
refined vegetable oil – for frying,
lemon – for serving.

Recipe – Rocky Mountain Oysters:
Wash the bull semen. Make an incision with a knife lengthwise and peel off the foil, pushing it away with your fingers.
Cut the bull testicles into medallions about 1 cm thick. Put into a bowl, pour beer and leave in a fridge to marinate for at least 8 hours, better for 24 hours.
In a separate bowl beat eggs, add mustard, salt and pepper. In another bowl pour breadcrumbs.
Heat oil in a large frying pan. Dip each piece of oxtail into the beaten eggs, roll in breadcrumbs and place in the pan. Fry for about 3 minutes on each side until golden brown.
Transfer the finished rocky mountain oysters to a plate carefully so as not to break the breading.
Cut the lemons into halves and place on each plate.
Serve the rocky mountain oysters immediately after cooking. Bon appetit!
